You probably recognize this: you come home from the supermarket, put down your groceries, and wonder where to store your new bottle of ketchup. In the fridge or just in the kitchen cupboard? This debate has been going on for years, and it divides not only families, but also social media. Proponents of the fridge often point to the label on many ketchup bottles, which states: “Keep refrigerated after opening”. They believe that refrigeration keeps the sauce fresh and tasty.
On the other hand, there are the kitchen cupboard enthusiasts who claim that ketchup contains natural preservatives due to the vinegar and sugar, which means that the sauce can be stored outside the refrigerator. Moreover, in many restaurants, ketchup is also served without refrigeration.
To end the debate once and for all, Heinz has officially stated how their ketchup should be stored. According to a Heinz spokesperson: “There was only ever one right answer: our ketchup belongs in the refrigerator.”
So Heinz clearly recommends refrigeration after opening. This advice is not new: in 2023, Heinz already tweeted: “FYI: Ketchup. goes. in. the. Fridge!!!” Despite the natural preservatives, ketchup remains good for a long time unopened, but after opening, the sauce comes into contact with air, which can affect its taste and freshness. The advice to store ketchup in the refrigerator helps to maintain its quality and prevent spoilage.
The label on Heinz ketchup also states: “For Best Results, Refrigerate After Opening”. This means that unopened ketchup can be left outside the refrigerator, because the sauce has not yet been exposed to oxygen. Only after the bottle is opened does the ketchup begin to come into contact with the air, which can lead to oxidation and bacterial growth.
In a restaurant, ketchup is often used up quickly, meaning the bottle doesn’t stay open long enough to deteriorate. At home, however, a bottle of ketchup can sit open for weeks or months. That’s why Heinz recommends refrigerating ketchup after opening, which will keep it fresh for up to six months. Outside of the refrigerator, the taste and texture can deteriorate more quickly.
